My Sons favorite Mini Chicken Pot Pies

Biscuit recipe:
2 c. Flour
3 tsp. Baking Powder
1 tsp. Salt
6 tbsp. oil or shortening (i use oil)
2/3 c. water

Mix all ingredients together. Add enough flour to knead easily. Knead on a floured board about 30 seconds.  Roll out to 1/2 inch thick. Cut with small cutter ( needs to cover a muffin cup ).

Filling:
1 c. cooked & diced chicken (I keep warm in a skillet while prepping other ingredients)
1 can cream of chicken ( can substitue cream of brocoli )
2 c. shredded cheese
1 c. frozen veggies ( I use baby blend )
1 tsp. onion powder
1 tsp. garlic salt

PREHEAT OVEN 400 C

In a large bowl, combine  cooked chicken, cream of chicken soup, frozen veggies, cheese, and spices.

Lightly grease a 12 cup muffin tin and place biscuits into each cup, pressing into the bottom and up the sides.

Evenly scoop  mixture into cups.

Bake 15 min.
